Problem with the FnD is like you said, slug and tank. Unless you're like 400lbs an X-factor would be fine, The OK boat should be fine, also look at the OK Malibu 2XL. Stability is something you can adjust to with a little time, slow will always be slow.

Most people forget to add the weight of their gear and full bait tank into the yak formula...
I see alot of yaks that are overloaded, then add a couple of nice fish. or thresher, ocean chop, and it's quite interesting to see..
I'll say go with the load ratio other than the preferances of others, all kayaks can catch fish,.. it's just the angler that has the difficulties..
