The frozen mack is better left frozen. Its meat will turn to mush thawed. Some fish will do that. Save it for lobster season. However, fresh mackerel is fine for poke, but truly a pain in the ass. Since there are too many bones to deal with. Here's what you do with fresh mackerel, Japanese style. Soak the fillets in salt for an hour, then in vinegar for another hour. Chop them up and toss them in a salad. That's good stuff. Now, quit screwing around with mackerel and put some time on the water, then you'll figure out how to catch yellowtail. Good luck. |
