Since he was on a long range boat for eight days, he doubtless came back with several hundred pounds of tuna, YT, dorado, and maybe even wahoo. The processors (like Five Star) meet the boat at the dock to put your fish on ice and then fillet/vacuum seal. Fish so processed will be good in the freezer for a year or more. Although, after a year, I generally can or smoke anything still in the freezer. By then a new tuna season has rolled around and I have to move out the old stuff to make room for the new. It's a tough job, but somebody has to do it
