what do the people who are far more smarter than me think about the cart pictured above? Will it support an Outback maintaining the integrity of the kayak?

lay a couple of 2x4s accross the built in cradles and store the yak upside down on top as shown in the manual.

Storing the thing upside down will probably be more beneficial than anything else you do aside from keeping it out of the sun/super hot environments. then a. you are storing it in the most structurally integral way as per the manual, and b. not storing it on any kind of pipes which is listed in the "do not" section of the manual.
