With someone of your size the seats going to sag lowering the hatch even lower. Add a large baittank and you can end up taking water in through the hatch. There some modifications you can do to the hatch and the kayak, to keep it from happening but personally I would not recommend a X-13 for anyone over 200 225 pounds if they want to carry a bait tank.
I agree with the weight recommendation, although the newest hinged center hatch has a backing plate making a seal that holds even with the flex. The hatch cover has a gasket on the rim that mates with an o ring as well.
