Looks like a great design with lots of potential. If I were building it, I would use 2" ABS rather than PVC and run a line or cable from the anchor point on the bike through the pipe to a place near the wheels. I would put some tension on the cable so it becomes kind of an internal safety strap.

If you can identify some places that tend to flex too much, just cut a larger piece of pipe in half and glue it to the flex points.

You have two flex points that, unless you figure out how to brace them, will always be a problem. They are at the seat and at the 45 degree angle over wheel. You could create a different kind of connection at the seat that pivioted up and down as well as right and left. The 45 degree connection needs to be really beefed up. I bet that is where the thing broke.
