Since being a teacher get us a well deserved week off I had chance to get out on the water more then usual and acquired a variety of tasty treats. The week started off with the Sewer camp-a-thon which was a blast with some good peeps. Managed to come home with 8 Rainbows to smoke and 8 more for lobster bait:lobster:. Does trout work for lobster bait, well I didnt get limits but I got the biggest bugs of the season for me, one at 5lbs. Then the next day I go to go out for some rock taco meat and almost got my limits from rock to rock deep at 150--180ft, fun as usual. Two days later I went out again for rock taco expedition II and got two then hooked into something that is larger then anything I have ever hooked before with a rock cod setup (squid skirts) at 160ft on the drop. It took me on a 2 hour joy ride. Once the sun went down I realized I had to pop it off and head back as I was about 8 miles out at the time. Never got to see it but I guess it was a monster Thresher, ray or maybe Mola mola. We will never know I guess. Props to the boater that checked up on me after sundown to make sure I was all good. What a great week, back to school now:o

Congratulations on a great week, could not have happened to a better guy. Hope Christmas is even better for you. Teachers work so hard and are under appreciated. Thank you for your service to our children.

Trout
 
I have about four nice sized trout in my freezer that my dad gave me. Since they have been frozen, I don't really want to do anything else but smoke them. Do you have a good brine, or good recipe you use? Or any other suggestion for smoked trout would be great. Thanks!

Hey Janine,
This is my recipe I have modified from other recipes I have put together. I love it, I would give it a try...
1 Gallon of filtered water
1/2 cup sugar
1 cup brown sugar
1 cup fine salt
1/2 cup soy sauce
2 Tablespoons Garlic powder
2 Tablespoons chili powder
3 Tablespoons lemon juice
3 Tablespoons mustard powder

let soak for 1-2 days. the longer the soak, the more the natural fish flavor turns into brine flavor. all depends on taste both ways rock. lightly wash off with water and let sit and air dry on a rack for a few hours to develop pellicle. smoke with alder or cherry chips for 4-6hrs at 180-200. enjoy on a poppy seed bagel, toasted, with chive cream cheese, capers, red onions, sliced tomato with a dash of salt/ground pepper and fresh lemon squirted over it;)
